SWEET POTATO POUND CAKE
List of Ingredients
- 1 1/2 CUPS CAKE FLOUR
- 1/2 TEASPOON BAKING SODA
- 1/2 TEASPOON SALT
- 1/2 TEASPOON CINNAMON
- 1/2 TEASPOON NUTMEG
- 1 STICK UNSALTED SOFTENED BUTTER
- 1/2 CUP SOUR CREAM AT ROOM TEMPERATURE
- 1 1/4 CUPS + 2 TABLESPOONS SUGAR
- 3 EGGS
- 1/2 CUP PUREED SWEET POTATO(1 ( 8 OUNCE) SWEET POTATO THAT HAS BEEN BAKED, PEELED AND PUREED)
- 1 TEASPOON VANILLA
Instructions
- PREHEAT OVEN TO 300°.
- SIFT TOGETHER THE FIRST 5 INGREDIENTS WELL AND SET ASIDE.
- BEAT THE BUTTER AND SOUR CREAM TOGETHER. ADD SUGAR AND BEAT UNTIL LIGHT AND FLUFFY. ADD EGGS, ONE AT A TIME, SCRAPING BOWL OFTEN. BEAT IN THE PUREED SWEET POTATO AND VANILLA INTO MIXTURE. ADD DRY INGREDIENTS, STIRRING ONLY TO COMBINE.
- POUR INTO A 8 X 4" GREASED LOAF PAN OR 3 MINI LOAF PANS AND BAKE FOR 1 TO 1 1/4 HOURS OR UNTIL TESTER INSERTED IN MIDDLE COMES OUT CLEAN. COOL 10 MINUTES IN PAN, THEN REMOVE TO A WIRE RACK TO COOL COMPLETELY.
