MUSHROOM AND HERB CRUST QUICHE
List of Ingredients
- 5 TABLESPOONS BUTTER
- 8 OUNCES MUSHROOMS, COARSELY CHOPPED
- 1/2 CUP SEASONED BREAD CRUMBS
- 3/4 CUP CHOPPED GREEN ONIONS
- 2 CUPS SHREDDED JACK OR SWISS CHEESE
- 1 CUP COTTAGE CHEESE
- 3 EGGS
- 1/4 TEASOON CAYENNE
- 1/4 TEASPOON PAPRIKA
Instructions
- PREHEAT OVEN TO 350°.
- GENEROUSLY GREASE A 9" DEEP DISH PIE PLATE.
- SAUTE MUSHROOMS AND ONIONS IN BUTTER UNTIL TENDER. ADD THE BREAD CRUMBS AND TOSS UNTIL MOIST. POUR INTO PIE PLATE AND SPREAD EVENLY OVER THE BOTTOM AND UP SIDES.
- SPRINKLE WITH SHREDDED CHEESE OVER CRUST.
- IN A BLENDER OR FOOD PROCESSOR, PROCESS COTTAGE CHEESE, EGGS AND CAYENNE UNTIL SMOOTH. POUR OVER THE CHEESE AND SPRINKLE WITH PAPRIKA.
- BAKE FOR 20 TO 25 MINUTES OR UNTIL SET. LET COOL 5 TO 10 MINUTES BEFORE SERVING.
