    MUSHROOM AND HERB CRUST QUICHE


    List of Ingredients


    • 5 TABLESPOONS BUTTER
    • 8 OUNCES MUSHROOMS, COARSELY CHOPPED
    • 1/2 CUP SEASONED BREAD CRUMBS
    • 3/4 CUP CHOPPED GREEN ONIONS
    • 2 CUPS SHREDDED JACK OR SWISS CHEESE
    • 1 CUP COTTAGE CHEESE
    • 3 EGGS
    • 1/4 TEASOON CAYENNE
    • 1/4 TEASPOON PAPRIKA


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. GENEROUSLY GREASE A 9" DEEP DISH PIE PLATE.
    3. SAUTE MUSHROOMS AND ONIONS IN BUTTER UNTIL TENDER. ADD THE BREAD CRUMBS AND TOSS UNTIL MOIST. POUR INTO PIE PLATE AND SPREAD EVENLY OVER THE BOTTOM AND UP SIDES.
    4. SPRINKLE WITH SHREDDED CHEESE OVER CRUST.
    5. IN A BLENDER OR FOOD PROCESSOR, PROCESS COTTAGE CHEESE, EGGS AND CAYENNE UNTIL SMOOTH. POUR OVER THE CHEESE AND SPRINKLE WITH PAPRIKA.
    6. BAKE FOR 20 TO 25 MINUTES OR UNTIL SET. LET COOL 5 TO 10 MINUTES BEFORE SERVING.
