    List of Ingredients


    • 4 LARGE EGGS
    • 3/4 CUP OIL
    • 1 TEASPOON SALT
    • 1 TEASPOON BAKING POWDER
    • 1 1/2 TEASPOONS VANILLA
    • 1 1/2 CUPS SUGAR
    • 3 CUPS FLOUR
    • 1 TEASPOON BAKING SODA
    • 1 EASPOON CINNAMON
    • 2 CUPS GRATED ZUCCHINI
    • 1 CUP CHOPPED WALNUTS OR PECANS


    Instructions


    1. PREHEAT OVEN TO 350°. GENEROUSLY GREASE AND FLOUR 9 X 5" LOAF PAN.
    2. STIR TOGETHER EGGS, OIL, SALT, BAKING POWDER, VANILLA, SUGAR, FLOUR BAKING SODA AND CINNAMON. ADD ZUCCHINI AND NUTS MIXING WELL TO INCORPORATE ALL INGREDIENTS. POUR INTO PREPARED PAN.
    3. BAKE 35 TO 40 MINUTE OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN.
    4. 1 LOAF
