BEST ZUCCHINI BREAD

- 4 LARGE EGGS
- 3/4 CUP OIL
- 1 TEASPOON SALT
- 1 TEASPOON BAKING POWDER
- 1 1/2 TEASPOONS VANILLA
- 1 1/2 CUPS SUGAR
- 3 CUPS FLOUR
- 1 TEASPOON BAKING SODA
- 1 EASPOON CINNAMON
- 2 CUPS GRATED ZUCCHINI
- 1 CUP CHOPPED WALNUTS OR PECANS
Instructions
- PREHEAT OVEN TO 350°. GENEROUSLY GREASE AND FLOUR 9 X 5" LOAF PAN.
- STIR TOGETHER EGGS, OIL, SALT, BAKING POWDER, VANILLA, SUGAR, FLOUR BAKING SODA AND CINNAMON. ADD ZUCCHINI AND NUTS MIXING WELL TO INCORPORATE ALL INGREDIENTS. POUR INTO PREPARED PAN.
- BAKE 35 TO 40 MINUTE OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN.
