BLUEBERRY ORANGE BREAD
List of Ingredients
- 2 CUPS FLOUR
- 1 TEASPOON BAKING POWDER
- 1/2 TEASPOON SALT
- 1/4 TEASPOON BAKING SODA
- 2 TABLESPOONS BUTTER, CUT UP
- 1/4 CUP BOILING WATER
- 1 EGG, SLIGHTLY BEATEN
- 1 CUP SUGAR
- 1/2 CUP ORANGE JUICE
- 1/2 DTEASPOON GRATED ORANGE PEEL
- 1 CUP FRESH BLUEBERRIES
Instructions
- PREHEAT OVEN TO 350°. GREASE THE BOTTOM AND 1/2" UP THE SIDES OF A 8 X 4" LOAF PAN AND SET ASIDE.
- IN A LARGE BOWL, STIR TOGETHER FLOUR, BAKING POWDER, SALT AND BAKING SODA, MAKE A WELL IN THE CENTER AND SET ASIDE.
- STIR TOGETHER THE BUTTER AND BOILING WATER UNTIL BUTTER IS MELTED.
- IN A MEDIUM BOWL, COMBINE EGG, SUGAR, ORANGE JUICE AND ORANGE PEEL, STIR IN BUTTER MIXTURE.
- ADD TO THE DRY INGREDIENTS, STIRRING WITH A WOODEN SPOON JUST UNTIL MOISTENED. FOLD IN BLUEBERRIES.
- SPOON BATTER INTO PREPARED PAN AND BAKE FOR 60 MINUTES OR UNTIL A CAKE TESTER INSERTED NEAR THE CENTER COMES OUT CLEAN.
- COOL 10 MINUTES IN PAN. REMOVE LOAF FROM PAN AND COOL COMPLETELY ON A WIRE RACK.
- WRAP IN FOIL AND STORE OVERNIGHT.
- 1 LOAF, 16 SLICES
- YOU CAN USE FROZEN BLUEBERRIES, THEY WILL BLEED WHEN YOU FOLD THEM INTO THE BATTER.
