    BLUEBERRY ORANGE BREAD


    List of Ingredients


    • 2 CUPS FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1/4 TEASPOON BAKING SODA
    • 2 TABLESPOONS BUTTER, CUT UP
    • 1/4 CUP BOILING WATER
    • 1 EGG, SLIGHTLY BEATEN
    • 1 CUP SUGAR
    • 1/2 CUP ORANGE JUICE
    • 1/2 DTEASPOON GRATED ORANGE PEEL
    • 1 CUP FRESH BLUEBERRIES


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE THE BOTTOM AND 1/2" UP THE SIDES OF A 8 X 4" LOAF PAN AND SET ASIDE.
    2. IN A LARGE BOWL, STIR TOGETHER FLOUR, BAKING POWDER, SALT AND BAKING SODA, MAKE A WELL IN THE CENTER AND SET ASIDE.
    3. STIR TOGETHER THE BUTTER AND BOILING WATER UNTIL BUTTER IS MELTED.
    4. IN A MEDIUM BOWL, COMBINE EGG, SUGAR, ORANGE JUICE AND ORANGE PEEL, STIR IN BUTTER MIXTURE.
    5. ADD TO THE DRY INGREDIENTS, STIRRING WITH A WOODEN SPOON JUST UNTIL MOISTENED. FOLD IN BLUEBERRIES.
    6. SPOON BATTER INTO PREPARED PAN AND BAKE FOR 60 MINUTES OR UNTIL A CAKE TESTER INSERTED NEAR THE CENTER COMES OUT CLEAN.
    7. COOL 10 MINUTES IN PAN. REMOVE LOAF FROM PAN AND COOL COMPLETELY ON A WIRE RACK.
    8. WRAP IN FOIL AND STORE OVERNIGHT.
    9. 1 LOAF, 16 SLICES
    10. YOU CAN USE FROZEN BLUEBERRIES, THEY WILL BLEED WHEN YOU FOLD THEM INTO THE BATTER.
