    CARROT BREAD


    List of Ingredients


    • 1 CUP SUGAR
    • 3/4 CUPS APPLESAUCE
    • 1/2 CUP EGG SUBSTITUTE
    • 1/2 CUP CRUSHED PINEAPPLE IN JUICE DRAINED
    • 1/2 CUP FLOUR
    • 1 CUP WHOLE WHEAT FLOUR
    • 1 TEASPOON EACH BAKING SODA, BAKING POWDER, SALT, VANILLA EXTRACT AND CINNAMON
    • 1/2 CUP CHOPPED PECANS OR WALNUTS
    • 1 CUP SHREDDED RAW CARROTS


    Instructions


    1. PREHEAT OVEN TO 350°. LIGHTLY COAT A LOAF PAN WITH VEGETABLE SPRAY, DUST WITH FLOUR AND SET ASIDE.
    2. COMBINE THE SUGAR, EGG SUBSTITUTE AND APPLESAUCE IN BOWL, MIXING WELL TO COMBINE ALL INGREDIENTS.
    3. COMBINE THE FLOUR, WHEAT FLOUR, BAKING SODA, BAKING POWDER, SALT AND CINNAMON MIXING WELL TO COMBINE ALL OF THE INGREDIENTS AND ADD TO THE APPLESAUCE MIXTURE.
    4. ADD THE CARROTS, PINEAPPLE, VANILLA AND NUTS. MIX WELL.
    5. POUR INTO PREPARED PAN AND BAKE FOR 50 MINUTES OR UNTIL TESTER COMES OUT CLEAN.
