    CHOCOLATE ZUCCHINI NUT BREAD


    List of Ingredients


    • 1 CUP VEGETABLE OIL
    • 2 CUPS SUGAR
    • 3 BEATEN EGGS
    • 2 OUNCES BAKING CHOCOLATE, MELTED
    • 2 CUPS GRATED AND PEELED ZUCHINI
    • 1 TEASPOON VANILLA
    • 3 CUPS FLOUR
    • 1 TEASPOON SALT
    • 1 TEASPOON CINNAMON
    • 1/4 TEASPOON BAKING POWDER
    • 1 TEASPOON BAKING SODA
    • 1 CUP CHOPPED NUTS
    • 1/2 CUP CHOCOLATE CHIPS


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE TWO 9 X 5" LOAF PANS. SET ASIDE.
    2. CREAM OIL AND SUGAR TOGETHER, ADD THE BEATEN EGGS. FOLD MELTED CHOCOLATE INTO EGG MIXTURE ALONG WITH ZUCCHINI AND VANILLA.
    3. SIFT TOGETHER FLOUR WITH SALT, CINNAMON, BAKING POWDER AND BAKING SODA. STIR WITH A WOODEN SPOON INTO ZUCHINI MIXTURE ALONG WITH NUTS AND CHOCOLATE CHIPS. MIX THOROUGHLY.
    4. POUR INTO PREPARED PANS AND BAKE FOR 1 HOUR. REMOVE FROM OVEN AND LET COOL 10 MINUTES, REMOVE FROM PANS AND PLACE ON A WIRE RACK TO COOL COMPLETELY.
    5. 2 LOAVES
