    CRANBERRY NUT BREAD


    List of Ingredients


    • 1 CUP CRANBERRIES CHOPPED, FRESH OR FROZEN
    • 1/2 CUP NUTS CHOPPED
    • 1 TABLESPOON GRATED ORANGE PEEL
    • 2 CUP FLOUR
    • 1/2 CUP SUGAR
    • 1 1/2 TEASPOON BAKING POWDER
    • 1 TEASPOON SALT
    • 1/2 TEASPOON BAKING SODA
    • 2 TABLESPOONS UNSWEETENED APPLESAUCE
    • 3/4 CUP ORANGE JUICE
    • 1 EGG WELL BEATEN
    • GLAZE:
    • 1/2 JAR SMUCKERS 100% SINPLE FRUIT ORANGE MARMALADE


    Instructions


    1. PREHEAT OVEN TO 350°. SPRAY A 9 X 5" LOAF PAN WITH VEGETABLE COOKING SPRAY. SET ASIDE.
    2. PLACE CRANBERRIES, NUTS AND ORANGE PEEL IN A BOWL AND SET ASIDE.
    3. MIX FLOUR, SUGAR, BAKING POWDER, BAKING SODA AND SALT IN A BOWL. CUT IN APPLESAUCE. STIR IN EGG AND ORANGE JUICE, MIXING JUST UNTIL DRY INGREDIENTS ARE MOISTENED. FOLD IN CRANBERRRY MIXTURE.
    4. SPOON MIXTURE INTO PREPARED PAN AND BAKE 60 MINUTES OR UNTIL CAKE TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL ON A WIRE RACK FOR 15 MINUTES. REMOVE LOAF FROM PAN AND COOL COMPLETELY. BRUSH BREAD WITH GLAZE.
    5. GLAZE: HEAT THE 1/2 JAR OF ORANGE MARMALADE IN MICROWAVE AND BRUSH OVER BREAD.
