EGGNOG QUICK BREAD
I MAKE THIS EGGNOG BREAD EVERY YEAR FOR THE HOLIDAYS. I ALSO GIVE THEM WRAPPED UP AS GIFTS. EVERYONE WHO TRIES THIS BREAD FALLS IN LOVE WITH IT.
List of Ingredients
- 2 1/4 CUPS FLOUR
- 2 TEASPOONS BAKING POWDER
- 1/4 TEASPOON NUTMEG
- 2 BEATEN EGGS
- 1 CUP SUGAR
- 1 CUP EGGNOG
- 1/2 CUP MELTED BUTTER OR MARGARINE, I USE SWEET BUTTER
- 1 TEASPOON VANILLA
- 1/2 TEASPOON RUM EXTRACT
- 1/2 TEASPOON SALT
Instructions
- PREHEAT OVEN TO 350°. GREASE A 9 X 5" LOAF PAN. SET ASIDE
- IN MIXING BOWL, COMBINE FLOUR, BAKING POWDER, 1/2 TEASPOON SALT AND NUTMEG. SET ASIDE.
- IN ANOTHER MIXING BOWL, COMBINE EGGS, SUGAR, EGGNOG, BUTTER, VANILLA AND RUM EXTRACT. MIX WELL TO INCORPORATE ALL INGREDIENTS WELL.
- POUR INTO DRY INGREDIENTS AND STIR TILL JUST MOISTENED.
- SPOON INTO PREPARED LOAF PAN AND BAKE FOR APPROXIMATELY 40 TO 45 MINUTES OR UNTIL CAKE TESTER INSERTED NEAR CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND PLACE ON A WIRE RACK FOR 10 TO 15 MINUTES. REMOVE FROM PAN AND COOL ON RACK COMPLETELY. WRAP AND STORE OVERNIGHT BEFORE SERVING.
Final Comments
THIS BREAD HAS A WONDERFUL AROMA WHILE BAKING IN THE OVEN. I HAVE ON OCCASION EXPERIMENTED WITH ADDING CANDIED CHERRIES OR PECANS AND THEY ALWAYS TASTED DELICIOUS.
