    EGGNOG QUICK BREAD

    I MAKE THIS EGGNOG BREAD EVERY YEAR FOR THE HOLIDAYS. I ALSO GIVE THEM WRAPPED UP AS GIFTS. EVERYONE WHO TRIES THIS BREAD FALLS IN LOVE WITH IT.


    List of Ingredients


    • 2 1/4 CUPS FLOUR
    • 2 TEASPOONS BAKING POWDER
    • 1/4 TEASPOON NUTMEG
    • 2 BEATEN EGGS
    • 1 CUP SUGAR
    • 1 CUP EGGNOG
    • 1/2 CUP MELTED BUTTER OR MARGARINE, I USE SWEET BUTTER
    • 1 TEASPOON VANILLA
    • 1/2 TEASPOON RUM EXTRACT
    • 1/2 TEASPOON SALT


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE A 9 X 5" LOAF PAN. SET ASIDE
    2. IN MIXING BOWL, COMBINE FLOUR, BAKING POWDER, 1/2 TEASPOON SALT AND NUTMEG. SET ASIDE.
    3. IN ANOTHER MIXING BOWL, COMBINE EGGS, SUGAR, EGGNOG, BUTTER, VANILLA AND RUM EXTRACT. MIX WELL TO INCORPORATE ALL INGREDIENTS WELL.
    4. POUR INTO DRY INGREDIENTS AND STIR TILL JUST MOISTENED.
    5. SPOON INTO PREPARED LOAF PAN AND BAKE FOR APPROXIMATELY 40 TO 45 MINUTES OR UNTIL CAKE TESTER INSERTED NEAR CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND PLACE ON A WIRE RACK FOR 10 TO 15 MINUTES. REMOVE FROM PAN AND COOL ON RACK COMPLETELY. WRAP AND STORE OVERNIGHT BEFORE SERVING.


    Final Comments


    THIS BREAD HAS A WONDERFUL AROMA WHILE BAKING IN THE OVEN. I HAVE ON OCCASION EXPERIMENTED WITH ADDING CANDIED CHERRIES OR PECANS AND THEY ALWAYS TASTED DELICIOUS.
