GINGERBREAD LOAF WITH APPLESAUCE
List of Ingredients
- 1 CUP RICE FLOUR
- 1 1/2 CUPS FLOUR
- 1/2 STICK BUTTER, SOFTENED
- 2 LARGE BEATEN EGGS
- 2 TABLESPOONS GROUND ALMONDS OR ALMOND PASTE
- 2 TABLESPOONS CANDIED ORANGE PEEL OR GRATED ORANGE RIND
- 1/2 CUP CHOPPED RAISINS
- 1/2 TEASPOON GROUND GINGER
- 1 TEASPOON BAKING SODA
- 1/2 CUP SOUR MILK OR SOUR CREAM

- APPLESAUCE:
- 8 LARGE APPLES, CORED, PEELED AND CHOPPED
- 1 CUP WATER
- 1 CUP SUGAR
- 2 TEASPOONS CINNAMON
Instructions
- PREHEAT OVEN TO 375°.BUTTER A LOAF PAN AND SET ASIDE.
- APPLESAUCE: PUT ALL OF THE INGREDIENTS FOR THE APPLESAUCE IN A HEAVY BOTTOMED POT AND BRING TO A BOIL, THEN TURN DOWN TO LOW HEAT, COVER AND SIMMER GENTLY FOR 1 HOUR. CHECK EVERY 20 MINUTES OR SO, TO STIR IT AND MAKE SURE THAT IT DOESN'T BURN.
- GENGERBREAD:
- SIFT FLOUR WITH BAKING SODA AND GINGER. MIX WITH RICE FLOUR AND RUB IN THE BUTTER WITH YOUR FINGERS. STIR IN GROUND ALMONDS, RAISINS AND SLICED PEEL.
- MIX MILK OR SOUR CREAM AND WELL BEATEN EGG, ADD TO DRY INGREDIENTS AND MIX WELL.
- TURN INTO PREPARED LOAF PAN AND BAKE FOR 1 1/4 HOURS IN OVEN TILL TESTER INSERTED INTO CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND COOL IN PAN 10 MINUTES. REMOVE FROM PAN AND COOL COMPLETELY ON WIRE RACK.
- SERVE WITH APPLESAUCE FOR A WONDERFUL TASTY TREAT.
