    HIGH FIBER PRUNE OAT BREAD


    List of Ingredients


    • 1 1/2 CUPS CHOPPED PITTED PRUNES
    • 1 CUP ROLLED OATSS
    • 1 1/2 TEASPOONS BAKING SODA
    • 1/2 TEASPOON SALT
    • 1/4 CUP BUTTER OR MARGARINE
    • 1 CUP BOILING WATER
    • 1 EGG
    • 3/4 CUP PACKED BROWN SUGAR
    • 1 CUP FLOUR
    • 1/4 CUP WHOLE WHEAT FLOUR


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. COMBINE PRUNES, OATS, BAKING SODA, SALT AND BUTTER IN A BOWL. ADD BOILING WATER AND STIR. SET ASIDE.
    3. IN ANOTHER BOWL, BEAT EGG AND SUGAR UNTIL WELL BLENDED. ADD FLOURS AND MIX WELLL, BATTER WILL BE STIFF.
    4. MIX IN PRUNE MIXTURE JUST TO BLENDED.
    5. POUR INTO A GREASED 8 1/2 X4 1/2" LOAF PAN. BAKE IN CENTER OF OVEN FOR 1 HOUR OR UNTIL TESTER COMES OUT CLEAN.
    6. COOL IN PAN 10 MINUTES. REMOVE BREAD TO A WIRE RACK AND COMPLETE COOLING.
    7. MAKES 1 LARGE LOAF ( 10 , 1 SLICE SERVINGS)
