LEMON BREAD
List of Ingredients
- 1 1/2 CUPS SIFTED FOUR
- 1 TEASPOON BAKING POWDER
- 1/4 TEASPOON SALT
- GRATED RIND OF ONE LEMON
- 1/2 CUP SOFTENED BUTTER
- 1 CUP SUGAR
- 2 EGGS
- 1/2 CUP MILK
- 1 TEASPOON LEMON EXTRACT
Instructions
- PREHEAT OVEN TO 350°.BUTTER AND FLOUR LOAF PAN, SET ASIDE.
- SIFT TOGETHER FLOUR, BAKING POWDER AND SALT THEN STIR IN GRATED LEMON RIND.
- IN ANOTHER BOWL, CREAM BUTTER AND SUGAR UNTILL LIGHT AND FLUFFY. ADD EGGS ONE AT A TIME BEATING WELL AFTER EACH ONE, ADD EXTRACT, THEN ADD FLOUR MIXTURE ALTERNATELY WITH MILK.
- POUR INTO LOAF PAN AND BAKE FOR 50 MINUTES OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND SET ON WIRE RACK.
- DISSOLVE 1/2 CUP CONFECTIONERS' SUGAR IN 1/4 CUP LEMON JUICE OVER LOW HEAT MIXING WELL.
- PIERCE TOP OF BREAD WITH WOODEN SKEWERS AND POUR TOPPING OVER BREAD WHILE STILL HOT. COOL IN PAN 15 MINUTES OR LONGER. TURN OUT AND COOL COMPLETELY ON WIRE RACK.
