    LEMON BREAD


    List of Ingredients


    • 1 1/2 CUPS SIFTED FOUR
    • 1 TEASPOON BAKING POWDER
    • 1/4 TEASPOON SALT
    • GRATED RIND OF ONE LEMON
    • 1/2 CUP SOFTENED BUTTER
    • 1 CUP SUGAR
    • 2 EGGS
    • 1/2 CUP MILK
    • 1 TEASPOON LEMON EXTRACT


    Instructions


    1. PREHEAT OVEN TO 350°.BUTTER AND FLOUR LOAF PAN, SET ASIDE.
    2. SIFT TOGETHER FLOUR, BAKING POWDER AND SALT THEN STIR IN GRATED LEMON RIND.
    3. IN ANOTHER BOWL, CREAM BUTTER AND SUGAR UNTILL LIGHT AND FLUFFY. ADD EGGS ONE AT A TIME BEATING WELL AFTER EACH ONE, ADD EXTRACT, THEN ADD FLOUR MIXTURE ALTERNATELY WITH MILK.
    4. POUR INTO LOAF PAN AND BAKE FOR 50 MINUTES OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND SET ON WIRE RACK.
    5. DISSOLVE 1/2 CUP CONFECTIONERS' SUGAR IN 1/4 CUP LEMON JUICE OVER LOW HEAT MIXING WELL.
    6. PIERCE TOP OF BREAD WITH WOODEN SKEWERS AND POUR TOPPING OVER BREAD WHILE STILL HOT. COOL IN PAN 15 MINUTES OR LONGER. TURN OUT AND COOL COMPLETELY ON WIRE RACK.
