    LEMON COFFEECAKE LOAF


    List of Ingredients


    • 1/3 CUP CRISCO SHORTENING
    • 3/4 CUPS SUGAR
    • 2 EGGS
    • 2 TEASPOON GRATED LEMON PEEL
    • 2 CUPS SIFTED FLOUR, SIFT FIRST, THEN MEASURE
    • 2 1/2 TEASPOONS BAKING POWDER
    • 1 TEASPOON SALT
    • 3/4 CUPS 1/2 AND 1/2 OR MILK
    • 1/2 CUP CHOPPED ALMONDS


    Instructions


    1. PREHEAT OVEN TO 350°. LIGHTLY GREASE LOAF PAN.
    2. CREAM TOGETHER CRISCO SHORTENING WITH SUGAR UNTIL LIGHT AND FLUFFY. BEAT IN EGGS AND LEMON PEEL.
    3. COMBINE FLOUR, BAKLING POWDER AND SALT. ADD TO CREAMED MIXTURE ALTERNATING WITH 1/2 AND 1/2 OR MILK, BEATING WELL AFTER EACH ADDITION. STIR IN NUTS.
    4. POUR INTO LOAF PAN AND BAKE 50 TO 55 MINUTES OR TILL TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL 10 MINUTES IN PAN. REMOVE AND PLACE ON A WIRE RACK TO COOL COMPLETELY.
    5. WRAP LOAF AND STORE OVERNIGHT BEFORE SERVING.
