    PUMPKIN ZUCCHINI BREAD

    THIS IS A GREAT QUICK BREAD TO MAKE AND GIVE AS GIFTS FOR THE HOLIDAYS.


    List of Ingredients


    • 3 EGGS, LIGHTLY BEATEN
    • 2 CUPS SUGAR
    • 1 CUP PUMPKIN PUREE
    • 1 CUP MELTED SWEET BUTTER
    • 1 TABLESPOON VANILLA
    • 3 CUPS FLOUR
    • 1 TEASPOON BAKING SODA
    • 1/2 TEASPOON BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1/2 TEASPOON CINNAMON
    • 1/2 TEASPOON GROUND NUTMEG
    • 1/2 TEASPOON GROUND CLOVES
    • 1 CUP SHREDDED ZUCCHINI
    • 1 CUP CHOPPED WALNUTS


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE AND FLOUR 2 LOAF PANS. SET ASIDE.
    2. IN A MIXING BOWL, BEAT EGGS AND SUGAR, STIR IN PUMPKIN AND BUTTER.
    3. STIR ALL DRY INGREDIENTS TOGETHER AND ADD TO EGG MIXTURE, MIXING WELL. STIR IN ZUCCHINI AND NUTS.
    4. DIVIDE DOUGH INTO PANS AND BAKE 45 TO 50 MINUTES OR UNTIL CAKE TESTER INSERTED IN CENTER OF LOAVES COMES OUT CLEAN.
    5. COOL IN PANS 10 MINUTES BEFORE REMOVING TO WIRE RACKS TO COOL COMPETELY.


    Final Comments


    YOU CAN ALSO USE THE MINI LOAF PANS, ADJUST BAKING TIME.
