List of Ingredients
- 2 PACKAGES OF CHICKEN TENDERS
- 1/4 CUP DRIED BREAD CRUMBS
- 2 TABLESPOONS UNSALTED BUTTER
- SALT AND PEPPER TO TASTE
- 1 ( 8 OUNCE ) LOAF OF ITALIAN BREAD
- SHREDDED ICEBERG LETTUCE
- RIPE TOMATOES, CUT INTO 1/4" THICK SLICES

- TARTAR SAUCE:
- 1 SCALLION TRIM OFF 2" OF GREEN
- 1 SMALL SOUR DILL PICKLE
- 1/4 CUP WASHED PARSLEY LEAVES, PACKED
- 2 CUPS MAYONNAISE
- 1 TEASPOON STRONG MUSTARD LIKE CREOLE OR DIJON
- SALT
- 1/8 TEASPOON CAYENNE PEPPER
Instructions
- IN A FOOD PROCESSOR MINCE THE SCALLION, PICKLE AND PARSLEY. ADD MAYONNAISE, MUSTARD, SALT AND CAYENNE PEPPER, PUREE MIXTURE TILL TOTALLY COMBINED, SCRAPING SIDES OF BOWL. APPROXIMATELY 1 CUP
- DREDGE THE CHICKEN IN BREAD CRUMBS.
- IN A LARGE SKILLET HEAT THE BUTTER, WHEN THE FOAMING SUBSIDES, BROWN THE CHICKEN ON ALL SIDES FOR ABOUT 10 MINUTES OR UNTIL COOKED THROUGH. SEASON TO TASTE WITH SALT AND PEPPER.
- SLICE THE BREAD IN HALF VERTICALLY AND THEN IN HALF AGAIN HORIZONTALLY, PULL OUT ALL OF THE SOFT BREAD CRUMBS TO CREATE FOUR BOAT LIKE SHELLS. SPREAD EACH BREAD BOAT WITH SAUCE, TOP WITH CHICKEN, THEN WITH SHREDDED LETTUCE AND TOMATO SLICES. SLICE EACH PIECE IN HALF AGAIN.
