    List of Ingredients


    • 4 FRANKFRUTER ROLLS
    • 4 TABLESPOONS MELTED BUTTER
    • 1 POUND ( 2 GENEROUS CUPS) COOKED LOBSTER OR CRABMEAT CHUNKS
    • 3/4 CUPS MAYONNAISE
    • 4 TO 5 TABLESPOONS CELERY, FINELY CHOPPED
    • 2 TABLESPOONS SCALLIONS, FINELY CHOPPED INCLUDING GREEN TOPS
    • 2 TABLESPOONS FRESH LEMON JUICE
    • 2 TEASPOONS DRAINED AND RINSED WELL CAPERS
    • SALT TO TASTE
    • FRESHLY GROUND PEPPER TO TASTE


    Instructions


    1. SPLIT ROLLS AND BRUSH WELL WITH BUTTER. GRILL BUTTER SIDE DOWN ON HEAT.
    2. WHILE ROLLS ARE GRILLING, TOSS THE CHOPPED SEAFOOD WITH MAYONNAISE, CELERY, SCALLIONS, LEMON JUICE, CAPERS AND SEASON TO TASTE WITH SALT AND PEPPER.
    3. WHEN ROLLS ARE LIGHTLY BROWNED, SPOON EQUAL PARTS OF THE LOBSTER OR CRAB MIXTURE ONTO THE BOTTOMS OF THE ROLLS, COVER WITH TOPS AND SERVE IMMEDIATELY.
