    • 1/2 GALLON PLUMS
    • 1 CUP WATER
    • 6 CUPS SUGAR
    • 1 PINT VINEGAR
    • 1 TEASPOON CINNAMON
    • 1 TEASPOON NUTMEG
    • 1 TEASPOON GINGER


    Instructions


    1. IN A LARGE POT, COMBINE PLUMS AND WATER. BRING TO A ROLLING BOIL, BOIL 5 MINUTES.
    2. POUR INTO COLANDER AND DRAIN.
    3. DUMP PULP AND SEEDS BACK INTO POT AND ADD SUGAR, VINEGAR AND SPICES. BRING BACK TO A BOILING. REDUCE HEAT TO LOW BOIL AND COOK FOR 30 MINUTES, STIRRING CONSTANTLY.
    4. POUR INTO JARS AND SEAL. ALLOW TO STAND OVERNIGH.
    5. YIELDS 3 TO 4 PINTS
