    CARIBBEAN SCONES


    List of Ingredients


    • 1 CUP FLOUR
    • 2 TEASPOONS BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1 TEASPOON SUGAR
    • 1 CUP MASHED COOKED SWEET POTATOESS
    • 3 TABLESPOONS MELTED AND COOLED BUTTER
    • BUTTER
    • HONEY IF DESIRED


    Instructions


    1. PREHEAT OVEN TO 375°.
    2. GREASE A BAKING SHEET AND SET ASIDE.
    3. SIFT FLOUR, BAKING POWDER AND SALT INTO A LARGE BOWL. STIR IN SUGAR.
    4. IN A LARGE BOWL, THOROUGHLY MIX SWEET POTATOES AND 1 1/2 TABLESPOONS MELTED BUTTER WITH A FORK. ADD TO DRY INGREDIENTS AND MIX TO FORM A SOFT DOUGH.
    5. TURN OUT ONTO FLOURED SURFACE. ROLL OUT WITH A FLOURED ROLLING PIN TO MAKE A ROUND 1/2" THICK DOUGH. CUT INTO ROUNDS WITH A 2" FLOURED BISCUIT CUTTER.
    6. PLACE 1 TO 1 1/2" APART ON BAKING SHEET. BRUSH TOPS WITH REMAINING 1 1/2 TABLESPOONS MELTED BUTTER.
    7. BAKE 20 MINUTES OR UNTIL PUFFED AND LIGHT BROWN. SPLIT AND SERVE WARM WITH BUTTER AND HONEY.
    8. 10 SCONES.
