COCONUT DATE WALNUT SCONES
List of Ingredients
- 4 1/2 CUPS FLOUR
- 1/2 CUP SUGAR
- 3 TABLESLPOONS BAKING POWDER
- 2 1/2 TEASPOONS SALT
- 1 CUP COCONUT
- 1 CUP CHOPPED DATES
- 1 CUP CHOPPED WALNUTS
- 1 STICK COLD SWEET BUTTER , CUBED
- 3 EGGS
- 1 1/4 CUPS MILK
Instructions
- STIR TOGETHER THE FLOUR, SUGAR, BAKING POWDER AND SALT IN A LARGE BOWL. STIR IN COCONUT, DATES AND WALNUTS. CUT IN THE BUTTER WITH YOUR FINGERS UNTIL THE MIXTURE RESEMBLES COARSE CRUMBS. ADD THE BEATEN EGGS AND MILK AND STIR UNTIL DOUGH CLINGS TOGETHER.
- REMOVE DOUGH TO A LIGHTLY FLOURED SURFACE AND KNEAD GENTLY 12 TO 15 TIMES.
- CUT DOUGH IN FOURTHS AND FORM SQUARE FROM EACH PART, ABOUT 1/2" THICK. CUT EACH SQUARE DIAGONALLY TWICE TO FORM FOUR TRIANGLES.
- ( THESE TRIANGLES CAN BE PLACED ON A COOKIE SHEET AND FROZEN UNTIL READY TO BAKE. THAW TO ROOM TEMPERATURE PRIOR TO BAKING THE AMOUNT YOU WANT TO USE).
- PLACE TRIANGLES ON AN UNGREASED SHEET AND BAKE IN A PREHEATED 375° OVEN UNTIL GOLDEN BROWN, ABOUT 12 TO 15 MINUTES. SERVE WARM WITH BUTTER.
