CORN SCONES
List of Ingredients
- 1/4 CUP SWEET BUTTER
- 1/2 CUP MILK
- 2 TABLESPOONS BROWN SUGAR
- 1/2 CUP CORNMEAL
- 1 1/2 CUPS FLOUR
- 1/4 TEASPOON SALT
- 1 TEASPOON BAKING POWDER
- 1/4 CUP CURRANTS
Instructions
- PREHEAT OVEN TO 375°.
- MELT THE BUTTER IN A SMALL SAUCEPAN. SET ASIDE.
- COMBINE THE MILK AND THE BROWN SUGAR IN A BOWL. ADD THE MELTED BUTTER TO THE MILK MIXTURE. SET ASIDE.
- IN A MIXING BOWL, COMBINE THE CORNMEAL AND FLOUR. SPRINKLE IN THE SALT AND THE BAKING POWDER AND MIX THOROUGHLY. STIR IN THE CURRANTS. ADD THE LIQUID INGREDIENTS TO THE FLOUR MIXTURE AND STIR JUST UNTIL COMBINED.
- ON A FLOURED BOARD, PRESS THE DOUGH INTO AN 8" CIRCLE ABOUT 1/2" THICK, CUT THE CIRCLE INTO 8 WEDGES. SEPARATE THE WEDGES AND PLACE THEM ON A GREASED BAKING SHEET AND BAKE FOR 15 TO 20 MINUTES OR UNTIL PUFFED AND GOLDEN.
