    IRISH CREAM SCONES


    List of Ingredients


    • 2 CUPS FLOUR
    • 1/4 CUP SUGAR
    • 2 TEASPOON BAKING POWDER
    • 1/8 TEASPOON SALT
    • DASH OF NUTMEG AND CINNAMON
    • 1/3 CUP COLD BUTTER
    • 1 EGG
    • 1/2 CUP HEAVY CREAM
    • 1 TEASPOON VANILLA
    • 1/2 CUP RAISINS, SOAKED 5 MINUTES IN WARM BRANDY TO COVER AND DRAINED


    Instructions


    1. PREHEAT OVEN TO 425°.
    2. IN A LARGE BOWL, MIX TOGETHER FLOUR, SUGAR, BAKING POWDER, SALT, NUTMEG AND CINNAMON. CUT IN BUTTER WITH YOUR FINGERS OR WITH A PASTRY CUTTER.
    3. IN A SMALL BOWL, MIX EGG, CREAM AND VANILLA. ADD CREAM MIXTURE AND RAISINS TO DRY INGREDIENTS.
    4. MIX WITH A WOODEN SPOON JUST UNTIL BLENDED. ( DO NOT OVER MIX). ON A FLOURED BOARD PAT OUT INTO AN EVEN 9" ROUND MOUND. WITH FLOURED KNIFE, CUT INTO 8 WEDGES. PLACE ON GREASED BAKING SHEET AND BAKE 10 TO 12 MINUTES OR UNTIL GOLDEN BROWN.
