    KILLER BUTTERMILK SCONES


    List of Ingredients


    • 2 1/2 CUPS FLOUR
    • 2 1/2 TEASPOONS BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1/2 CUP DRIED CURRANTS
    • 1 EGG, SLIGHTLY BEATEN
    • 2 TABLESPOONS SUGAR
    • 1/2 TEASPOON BAKING SODA
    • 1/2 CUP SWEET COLD BUTTER, CUBED
    • 1 CUP BUTTERMILK


    Instructions


    1. PREHEAT OVEN TO 425°.
    2. COMBINE FLOUR, SUGAR, BAKING POWDER, BAKING SODA AND SALT IN A FOOD PROCESSOR BOWL. WHILE PROCESSOR IS RUNNING, ADD BUTTER AND PROCESS UNTIL THE MIXTURE RESEMBLES COARSL MEAL. TRANSFER TO A BOWL AND ADD CURRANTS MIXING WELL. ADD BUTTERMILK AND STIRRING QUICKLY WITH A FORK UNTIL THE DOUGH IS SOFT AND SLIGHTLY STICKY. WITH FLOURED HANDS, PRESS THE DOUGH INTO A BALL. KNEAD GENTLY 12 TIMES.
    3. FLATTEN DOUGH INTO A 1" THICK CIRCLE AND CUT OUT WITH DESIRED SIZE ROUND CUTTER. REPEAT UNTIL ALL DOUGH IS USED.
    4. BRUSH SCONES WITH EGG AND SPRINKLE WITH SOME SUGAR. BAKE 12 TO 15 MINUTES.
