    LEMON BLUEBERRY SCONES


    List of Ingredients


    • 3 CUPS FLOUR
    • 1/2 CUP BROWN SUGAR
    • 3 TEASPOONS BAKING POWDER
    • 1 CUP SWEET SOFTENED BUTTER
    • 3 CUPS CHOPPED OATMEAL OR BABY OATS
    • 1 CUP BLUEBERRIES, FRESH, FROZEN OR DRIED
    • 1 TEASPOON LEMON PEEL
    • 3 BEATEN EGGS
    • 3/4 CUPS SOUR CREAM
    • MILK AND SUGAR


    Instructions


    1. PREHEAT OVEN TO 400°.
    2. COMBINE FLOUR, SUGAR AND BAKING POWDER IN A LARGE BOWL. CUT IN BUTTER WITH A PASTRY BLENDER OR WITH YOUR FINGERS UNTIL THE CONSISTENCY OF COARSE CRUMBS. ADD OATS AND PEEL (AND DRIED BERRIES IF USING AT THIS TIME).
    3. BEAT EGG AND SOUR CREAM TOGETHER. MIX WET INGREDIENTS INTO THE DRY MIXTURE IN TWO PARTS, STIRRING JUST UNTIL MOISTENED. CAREFULLY FOLD IN FRESH OR FROZEN BERRIES IF USING. PAT OUT 1/3 OF THE DOUGH ON FLOURED BOARD AND CUT INTO 6 SCONES. REPEAT TWICE MORE WITH REMAINING DOUGH.
    4. PLACE ON A GREASED COOKIE SHEET. BRUSH TOPS WITH MILK AND SPRINKLE WITH SUGAR.
    5. BAKE FOR 10 TO 12 MINUTES OR UNTIL GOLDEN BROWN MAKING SURE THEY ARE BAKED THROUGH BUT NOT DRIED OUT. SERVE WARM WITH BUTTER AND PRESERVES.
