LEMON SCONES
List of Ingredients
- 1 1/2 CUPS FLOUR
- 3 TABLESPOONS SUGAR
- 1 1/2 TEASPOONS GRATED LEMON PEEL ( 1 LEMON)
- 1 1/2 TEASPOONS BAKING POWDER
- 1/4 TEASPOON BAKING SODA
- 1/4 TEASPOON SALT
- 6 TABLESPOONS CHILLED BUTTER CUT INTO PIECES
- 9 TABLESPOONS WHIPPPING CREAM
- 2 TABLESPOONS FRESH LEMON JUICE
Instructions
- PREHEAT OVEN TO 350°.
- IN FOOD PROCESSOR BOWL, MIX FLOUR, SUGAR, LEMON PEEL, BAKING POWDER, BAKING SODA AND SALT. PULSE A FEW TIMES TO BLEND INGREDIENTS. ADD BUTTER WITH THE ON AND OFF BUTTON PULSING TILL MIXTURE RESEMBLES COARSE MEAL.
- REMOVE MIXTURE INTO A BOWL. ADD 8 TABLESPOONS CREAM AND LEMON JUICE AND BLEND UNTIL SOFT MOIST DOUGH FORMS.
- DROP DOUGH BY 1/4 CUP FULL ONTO BAKING SHEET. BRUSH TOPS WITH REMAINING 1 TABLESPOON OF CREAM. SPRINKLE WITH 2 TABLESPOONS OF SUGAR.
- BAKE FOR APPROXIMATELY 20 TO 25 MINUTES OR UNTIL GOLDEN BROWN.
