MELT IN YOUR MOUTH SCONES
Recipe Introduction
VERY LIGHT AND AIRY. THESE SCONES ARE OUT OF THIS WORLD. THEY REMIND ME OF THE YEAST BISCUITS WHICH I MAKE. ONE BITE AND YOU WILL BE HOOKED.
List of Ingredients
- 6 CUPS SIFTED FLOUR
- 3 TABLESPOONS BAKING POWDER
- 3 EGGS
- 2 CUPS 1/2 AND 1/2 OR HEAVY CREAM
- 3/4 CUPS OIL
- 2 1/2CUP GOLDEN RAISINS OR WALNUTS OR PECANS
- 1/2 CUP SUGAR, OPTIONAL, BUT ADVISED
Instructions
- PREHEAT OVEN TO 400°.
- WHISK TOGETHER EGGS, MILK AND OIL. ADD FLOUR, SUGAR IF USING AND BAKING POWDER. MIX WELL, ADD RAISINS OR NUTS. MIX AGAIN.
- PAT OUT A BALL INTO A 6" CIRCLE. CUT INTO WEDGES AND PLACE CLOSE TOGETHER ON A LIGHTLY GREASED BAKING SHEET. BRUSH THE TOPS WITH 1/2 & 1/2 AND SPRINKLE WITH A GOOD AMOUNT OF SUGAR AND BAKE UNTIL SLIGHTLY BROWN ABOUT 15 MINUTES. OR IF YOU LIKE, DROP A 1/4 CUP OF DOUGH ON BAKING SHEET, OR ROLL OUT DOUGH AND CUT OUT WITH A 2" FLOURED BISCUIT CUTTER.
- REPEAT TILL ALL DOUGH IS USED UP.
- 24 SCONES
- THIS DOUGH IS BEAUTIFUL AND FIRM ENOUGH FOR YOU TO HANDLE.
Final Comments
IF YOU DECIDE NOT TO ADD THE SUGAR. THE SCONES WILL BE SOMEWHAT BLAND AND SHOULD BE SERVED WITH A SWEET JAM OR PRESERVE WHILE STILL WARM.
