    • 1 1/2 CUPS FLOUR
    • 2 TEASPOONS BAKING POWDER
    • 1 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 1/4 TEASPOON SUGAR
    • 4 TABLESPOONS COLD BUTTER, CUBED
    • 1/2 CUP GOLDEN RAISINS
    • 3/4 CUP PLAIN NONFAT YOGURT
    • GRATED PEEL OF 1/2 LEMON
    • MILK


    Instructions


    1. PREHEAT OVEN TO 425°. LIGHTLY GREASE A BAKING SHEET WITH A COOKING SPRAY.
    2. SIFT TOGETHER FLOUR, BAKING POWDER, BAKING SODA AND SALT. STIR IN SUGAR AND CUT IN THE BUTTER WITH A PASTRY BLENDER OR WITH YOUR FINGERS UNTIL MIXTURE RESEMBLES CRUMBS. MIX IN RAISINS.
    3. COMBINE YOGURT AND LEMON PEEL. WITH A FORK, STIR INTO DRY MIXTURE TO FORM A STIFF DOUGH.
    4. TURN OUT ONTO A FLOURED BOARD AND KNEAD WITH HANDS JUST UNTIL SMOOTH.
    5. ROLL DOUGH OUT TO 1/2" THICK CUT OUT WITH A 2" FLOURED BISCUIT CUTTER.
    6. ARRANGE ON COOKIE SHEET. BRUSH TOPS WITH MILK AND BAKE FOR 10 TO 12 MINUTES OR UNTIL LIGHTLY BROWNED. COOL ON A WIRE RACK AND SERVE IMMEDIATELY WITH BUTTER AND PRESERVES OF YOUR CHOICE.
