    SCOTTISH OAT SCONES


    List of Ingredients


    • 3 CUPS FLOUR
    • 4 CUPS ROLLED OATS
    • 1/2 CUP SUGAR
    • 8 TEASPOONS BAKING POWDER
    • 1 TEASPOON SALT
    • 1 CUP CURRANTS
    • 2 LARGE EGGS, BEATEN
    • 1 CUP MELTED SWEET BUTTER
    • 2/3 CUP MILK


    Instructions


    1. PREHEAT OVEN TO 425°. GREASE BAKING SHEET AND SET ASIDE.
    2. COMBINE FLOUR, OATS, SUGAR , BAKING BOWDER, SALT AND CURRANTS IN A LARGE BOWL. MAKE A WELL IN THE CENTER.
    3. BEAT EGGS UNTIL FROTHY, MIX IN MELTED BUTTER AND MILK AND POUR INTO WELL OF DRY INGREDIENTS. STIR TO MAKE A SOFT DOUGH. REMOVE TO A LIGHTLY FLOURED SURFACE AND KNEAD 4 TO 6 TIMES. PAT DOUGH INTO TWO 6" CIRCLES.
    4. TRANSFER TO GREASED BAKING SHEET AND SCORE EACH TOP INTO 8 PIE SHAPED WEDGES. BAKE 15 MINUTES UNTIL RISEN AND BROWNED. SERVE WARM WITH BUTTER AND YOUR FAVORITE PRESERVE.
