    TROPICAL SCONES

    THIS RECIPE COMES FROM THE INN AT 410 IN FLAGSTAFF, ARIZONA. IT IS FULL OF WONDERFUL TASTY TREATS.


    List of Ingredients


    • 1 1/2 CUPS WHITE FOUR
    • 1 TEASPOON BAKING POWDER ( FOR ALTITUDES OVER 3000' USE 1/2 TSPN)
    • 1/2 TEASPOON BAKING SODA
    • 1/8 TEASPOON SALT
    • 3 TABLESPOONS MARGARINE, CHILLED AND CUT INTO SMALL PIECES
    • 3/4 CUP FINELY CHOPED MIXED DRIED TROPICAL FRUIT
    • 1/4 CUP FINELY CHOPPED DRIED PINEAPPLE
    • 1/2 CUP TOASTED SUNFLOWER SEEDS*** SEE NOTE BELOW
    • 1/2 CUP WHITE CHOCOLATE CHIPS
    • 1 EGG, SLIGHTLY BEATEN
    • 1/2 CUP PLAIN NONFAT YOGURT
    • 1 TO 2 DRIPS LEMON OIL OR 1/4 TEASPOON LEMON ZEST
    • 6 TEASPOONS SUGAR


    Instructions


    1. PREHEAT OVEN TO 400°. SPRAY A COOKIE SHEET WITH A VEGETABLE COOKING SPRAY.
    2. IN A LARGE BOWL, MIX TOGETHER FLOUR, BAKING POWDER, BAKING SODA AND SALT. USING A PASTRY BLENDER OR FORK OR 2 KNIVES, CUT MARGARINE PIECES INTO THE FLOUR UNTIL MIXTURE RESEMBLES COARSE SAND. STIR IN DRIED FRUIT, DRIED PINEAPPLE, SUNFLOWER SEEDS AND WHITE CHOCOLATE CHIPS. SET ASIDE.
    3. IN A MEDIUM SIZE BOWL, WHISK TOGETHER EGG, YOGURT, LEMON OIL OR LEMON ZEST AND SUGAR. ADD TO FLOUR MIXTURE AND MIX JUST UNTIL MOISTENED. DOUGH WILL BE STICKY. WETTING HANDS SLIGHTING TO KEEP DOUGH FROM STICKING, SHAPE INTO A ROUND BALL AND FLATTEN SLIGHTLY. PLACE ON PREPARED COOKIE SHEET. WITH A LARGE SERRATED KNIFE, CUT INTO 8 WEDGES, DO NOT SEPERATE.
    4. BAKE 15 TO 20 MINUTES OR UNTIL GOLDEN AND TOOTHPICK INSERTED INTO CENTER COMES OUT CLEAN. REMOVE TO WIRE RACK TO COOL.
    5. *****NOTE: PACKAGED SUNFLOWER SEEDS ARE USUALLY ROASTED IN OIL, LIKE PEANUTS. TO CUT DOWN ON THIS EXCESS FAT, BUY RAW, UNSALTED SUNFLOWER SEEDS FOUND IN HEALTH FOOD STORES OR BULK FOOD DEPARTMENTS OF LARGE SUPERMARKETS. SPREAD ON A BAKING SHEET AND TOAST AT 350° UNTIL GOLDEN.
