    • 4 STRIPS SWEET GREEN PEPPER
    • 4 STRIPS SWEET RED PEPPER
    • 1 HALIBUT STEAK, 1/2 POUND
    • 1/2 CUP UNSWEETENED PINEAPPLE JUICE
    • 1/4 CUP WATER
    • 1/2 SWEET POTATO, ABOUT 5 OUNCES, PARTIALLY COOKED AND CUT INTO 1" PIECES
    • 2 PLUM TOMATOES, COARSELY CHOPPED
    • 1 TABLESPOON LIME JUICE
    • 1/4 TEASPOON GROUND ALLSPICE
    • 1/4 TEASPOON BLACK PEPPER
    • 1/8 TEASPOON GROUND RED PEPPER, CAYENNE
    • 1 1/2 CUPS HOT COOKED RICE


    Instructions


    1. COAT NONSTICK SKILLET WITH COOKING SPRAY AND HEAT. ADD GREEN AND RED PEPPER STRIPS, SAUTE 1 MINUTE. ADD HALIBUT, SAUTE 1 MINUTE PER SIDE, STIRRING.
    2. ADD PINEPPLE JUICE, WATER, SWEET POTATO, TOMATOES, LIME JUICE, ALLSPICE, BLACK PEPPER AND CAYENNE PEPPER TO SKILLET. COVER AND SIMMER 3 MINUTES OR UNTIL FISH IS COOKED THROUGH. CUT FISH IN HALF.
    3. SERVE EACH HALF OVER 3/4 CUPS COOKED RICE.
