- 4 STRIPS SWEET GREEN PEPPER
- 4 STRIPS SWEET RED PEPPER
- 1 HALIBUT STEAK, 1/2 POUND
- 1/2 CUP UNSWEETENED PINEAPPLE JUICE
- 1/4 CUP WATER
- 1/2 SWEET POTATO, ABOUT 5 OUNCES, PARTIALLY COOKED AND CUT INTO 1" PIECES
- 2 PLUM TOMATOES, COARSELY CHOPPED
- 1 TABLESPOON LIME JUICE
- 1/4 TEASPOON GROUND ALLSPICE
- 1/4 TEASPOON BLACK PEPPER
- 1/8 TEASPOON GROUND RED PEPPER, CAYENNE
- 1 1/2 CUPS HOT COOKED RICE
Instructions
- COAT NONSTICK SKILLET WITH COOKING SPRAY AND HEAT. ADD GREEN AND RED PEPPER STRIPS, SAUTE 1 MINUTE. ADD HALIBUT, SAUTE 1 MINUTE PER SIDE, STIRRING.
- ADD PINEPPLE JUICE, WATER, SWEET POTATO, TOMATOES, LIME JUICE, ALLSPICE, BLACK PEPPER AND CAYENNE PEPPER TO SKILLET. COVER AND SIMMER 3 MINUTES OR UNTIL FISH IS COOKED THROUGH. CUT FISH IN HALF.
- SERVE EACH HALF OVER 3/4 CUPS COOKED RICE.
