CRAB CAKES WITH RED PEPPER CREAM SAUCE
List of Ingredients
- RED PEPPER CREAM SAUCE:
- JUICE OF 1 LEMON
- 2 GARLIC CLOVES CHOPPED UP
- 1/4 CUP WHITE WINE VINEGAR OR RICE WINE
- 1 TEASPOON DIJON MUSTARD
- 2 ROASTED RED PEPPERS PEELED
- 1 1/2 CUPS OLIVE OIL
- SALT AND PEPPER TO TASTE
- CRAB CAKE MIX:
- 1 LB CRAB MEAT, STRAINED AND BROKEN UP INTO PIECES
- 1/2 ONION CHOPPED FINELY
- 1/2 RED ROASTED PEPPER CHOPPED
- 1 TABLESPOON FRESH PARSLELY
- 2 GARLIC CLOVES CHOPPED FINELY
- 3 TABLESLPOONS BREAD CRUMBS
- 5 DASHES WORCESTERSHIRE SAUCE
- 1/4 CUP MAYONNAISE
- 1/2 CUP FLOUR
- 1/2 CUP CORNMEAL
Instructions
- SAUCE:
COMBINE ALL INGREDIENTS ( EXCEPT OLIVE OIL ) IN A FOOD PROCESSOR UNTIL COMBINED. WHILE PROCESSOR IS RUNNING, SLOWLY ADD IN A STREAM THE OLIVE OIL. PROCESS UNTIL COMBINED. POUR IN A CONTAINER AND PLACE IN REFRIGERATOR.
- CRAB CAKE MIX:
COMBINE ALL OF THE INGRDIENTS ( EXCEPT FOR THE FLOUR AND CORNMEAL ) TOGETHER AND INCORPORATE WELL. LET SIT FOR 15 MINUTES. FORM INTO CAKES AND PLACE IN A MIXTURE OF CORNMEAL AND FLOUR. COAT BOTH SIDES OF CRAB CAKES.
- TO A SAUTE PAN, ADD OLIVE OIL ON MEDIUM HIGH HEAT. ADD CRAB CAKES AND SAUTEE UNTIL GOLDEN BROWN ON ONE SIDE, TURN AND BROWN OTHER SIDE, ADDING OLIVE OIL AS NEEDED.
- SERVE WITH RED PEPPER CREAM SAUCE.
Final Comments
THIS IS ONE OF THOSE RECIPES WHICH I HAVE CREATED OVER THE YEARS. IT IS VERY DELICIOUS AND COULD BE SERVED AS AN APPETIZER.
