    ROASTED SALAMON


    List of Ingredients


    • 2 SALMON FILLETS, 4 OUNCES EACH
    • 1/4 CUP UNSWEETENED PINEAPPLE JUICE
    • 2 TABLESPOONS LEMON JUICE
    • 2 TEASPOONS BROWN SUGAR
    • 1 TEASPOON GRATED LEMON RIND
    • 1/2 TEASPOON CHILI POWDER
    • 1/4 TEASPOON SALT
    • 1/8 TESPOON GROUND CINNAMON
    • COOKING SPRAY
    • 2 CUPS MASHED POTATOES
    • 2 CUPS STEAMED BROCCOLI
    • 2 TEASPOONS BUTTER


    Instructions


    1. PREHET OVEN TO 400°.
    2. PLACE FILLETS IN A FOOD STORAGE BAG WITH THE PINEAPPLE JUICE, LEMON JUICE. CHILL 15 MINUTES.
    3. MIX SUGAR, LEMON RIND, CHILI POWDER, SALT AND CINNAMON IN A BOWL.
    4. REMOVE FISH FROM MARINADE. PAT DRY. PLACE SKIN SIDE DOWN, IN A SMALL BAKING DISH COATED WITH COOKING SPRAY. SPRINKLE WITH SPICE MIXTURE OVER FISH.
    5. BAKE IN OVEN FOR 12 MINUTES OR UNTIL FISH FLAKES WITH FORK. SERVE EACH PORTION WITH 1 CUP MASHED POTATOES AND 1 CUP STEAMED BROCCOLI WITH 1 TEASPOON BUTTER.
