ROASTED SALAMON
List of Ingredients
- 2 SALMON FILLETS, 4 OUNCES EACH
- 1/4 CUP UNSWEETENED PINEAPPLE JUICE
- 2 TABLESPOONS LEMON JUICE
- 2 TEASPOONS BROWN SUGAR
- 1 TEASPOON GRATED LEMON RIND
- 1/2 TEASPOON CHILI POWDER
- 1/4 TEASPOON SALT
- 1/8 TESPOON GROUND CINNAMON
- COOKING SPRAY
- 2 CUPS MASHED POTATOES
- 2 CUPS STEAMED BROCCOLI
- 2 TEASPOONS BUTTER
Instructions
- PREHET OVEN TO 400°.
- PLACE FILLETS IN A FOOD STORAGE BAG WITH THE PINEAPPLE JUICE, LEMON JUICE. CHILL 15 MINUTES.
- MIX SUGAR, LEMON RIND, CHILI POWDER, SALT AND CINNAMON IN A BOWL.
- REMOVE FISH FROM MARINADE. PAT DRY. PLACE SKIN SIDE DOWN, IN A SMALL BAKING DISH COATED WITH COOKING SPRAY. SPRINKLE WITH SPICE MIXTURE OVER FISH.
- BAKE IN OVEN FOR 12 MINUTES OR UNTIL FISH FLAKES WITH FORK. SERVE EACH PORTION WITH 1 CUP MASHED POTATOES AND 1 CUP STEAMED BROCCOLI WITH 1 TEASPOON BUTTER.
