- 8 OUNCES SHRIMP, PEELED AND DEVINEDDD
- 1 TEASPOON CANOLA OIL
- 2 TEASPOONS CHOPPED GARLIC
- 2 TABLESPOONS CHOPPED TOASTED ALMONDS
- 1 TABLESPOON LIME JUICE
- 1/4 TEASPOON GRATED LIME RIND
- PINCH EACH OF SALT AND PEPPER
- 1 1/2 CUPS HOT COOKED RICE
- 1 OUNCE SHREDDED PART SKIM MOZZARELLA
- 1 TEASPOON CHOPPED FRESH FLAT LEAF PARSLEY
Instructions
- HEAT BROILER.
- SAUTE SHRIMP IN OIL IN A NONSTICK SKILLET OVER HIGH HEAT FOR 1 MINUTE OR UNTIL PINK. ADD GARLIC AND COOK 30 SECONDS. REDUCE HEAT, SIR IN ALMONDS, LIME JUICE AND RIND AND SALT AND PEPPER. REMOVE FROM HEAT.
- SPREAD RICE OVER BOTTOM OF A BROILER PROOF DISH, SPOON SHRIMP MIXTURE OVER RICE. TOP WITH MOZZARELLA CHEESE.
- BROIL 6" FROM HEAT FOR 1 MINUTE OR UNTIL CHEESE IS MELTED. GARNISH WITH PARSLEY.
