    List of Ingredients


    • 8 OUNCES SHRIMP, PEELED AND DEVINEDDD
    • 1 TEASPOON CANOLA OIL
    • 2 TEASPOONS CHOPPED GARLIC
    • 2 TABLESPOONS CHOPPED TOASTED ALMONDS
    • 1 TABLESPOON LIME JUICE
    • 1/4 TEASPOON GRATED LIME RIND
    • PINCH EACH OF SALT AND PEPPER
    • 1 1/2 CUPS HOT COOKED RICE
    • 1 OUNCE SHREDDED PART SKIM MOZZARELLA
    • 1 TEASPOON CHOPPED FRESH FLAT LEAF PARSLEY


    Instructions


    1. HEAT BROILER.
    2. SAUTE SHRIMP IN OIL IN A NONSTICK SKILLET OVER HIGH HEAT FOR 1 MINUTE OR UNTIL PINK. ADD GARLIC AND COOK 30 SECONDS. REDUCE HEAT, SIR IN ALMONDS, LIME JUICE AND RIND AND SALT AND PEPPER. REMOVE FROM HEAT.
    3. SPREAD RICE OVER BOTTOM OF A BROILER PROOF DISH, SPOON SHRIMP MIXTURE OVER RICE. TOP WITH MOZZARELLA CHEESE.
    4. BROIL 6" FROM HEAT FOR 1 MINUTE OR UNTIL CHEESE IS MELTED. GARNISH WITH PARSLEY.
