SHRIMP STUFFED WITH GOAT CHEESE (10*)

List of Ingredients
- 12 LARGE SHRIMPS CLEANED AND DEVEINED
- 1/2 CUP GOAT CHEESE, SOFT (CHEVERE)
- 1 TABLESPOON FINEL DICED RED ONION
- 1/2 TABLESPOON CHIVES, CHOPPED
- 1/2 CUP FLOUR
- 2 EGGS
- 2 CUPS BREAD CRUMBS OR PANKO(JAPANESE BREAD CRUMBS)
- SALT
- PEPPER
- OIL FOR FRYING
Instructions
- BUTTERFLY EACH SHRIMP. PLACE A BUTTERFLIED SHRIMP BETWEEN 2 PIECES OF PLASTIC AND POUND FLAT. BE CAREFUL NOT TO TEAR THE SHRIMP.
- MIX THE CHEESE, ONION, CHIVES TOGETHER, ADD SALT AND PEPPER TO TASTE. PLACE A SMALL AMOUNT OF MIXTURE IN CENTER OF FLATTENED SHRIMP AND ROLL UP INTO TIGHT BUNDLE AND SET ASIDE. REPEAT WITH REMAINING SHRIMPS.
- WHIP THE EGG WITH A TABLESPOON OF WATER TO MAKE AN EGG WASH. DIP SHRIMP INTO FLOUR,THEN EGG WASH AND THEN INTO THE BREAD CRUMBS, MAKING SURE THAT YOU COMPLETELY COAT EACH SHRIMP.
- HEAT OIL TO 325°. DEEP FRY FOR 2 TO 3 MINUTES.
- PANKO IS A JAPANESE BREAD CRUMB WHICH IS EXCELLENT TO USE IF YOU WANT A REAL NICE CRUNCHY CRUST. IT SHOULD BE USED IN THIS RECIPE, BUT IT IT'S NOT AVAILABLE YOU CAN USE REGULAR BREAD CRUMBS.
