    SHRIMP STUFFED WITH GOAT CHEESE (10*)

    List of Ingredients


    • 12 LARGE SHRIMPS CLEANED AND DEVEINED
    • 1/2 CUP GOAT CHEESE, SOFT (CHEVERE)
    • 1 TABLESPOON FINEL DICED RED ONION
    • 1/2 TABLESPOON CHIVES, CHOPPED
    • 1/2 CUP FLOUR
    • 2 EGGS
    • 2 CUPS BREAD CRUMBS OR PANKO(JAPANESE BREAD CRUMBS)
    • SALT
    • PEPPER
    • OIL FOR FRYING


    Instructions


    1. BUTTERFLY EACH SHRIMP. PLACE A BUTTERFLIED SHRIMP BETWEEN 2 PIECES OF PLASTIC AND POUND FLAT. BE CAREFUL NOT TO TEAR THE SHRIMP.

    2. MIX THE CHEESE, ONION, CHIVES TOGETHER, ADD SALT AND PEPPER TO TASTE. PLACE A SMALL AMOUNT OF MIXTURE IN CENTER OF FLATTENED SHRIMP AND ROLL UP INTO TIGHT BUNDLE AND SET ASIDE. REPEAT WITH REMAINING SHRIMPS.

    3. WHIP THE EGG WITH A TABLESPOON OF WATER TO MAKE AN EGG WASH. DIP SHRIMP INTO FLOUR,THEN EGG WASH AND THEN INTO THE BREAD CRUMBS, MAKING SURE THAT YOU COMPLETELY COAT EACH SHRIMP.

    4. HEAT OIL TO 325°. DEEP FRY FOR 2 TO 3 MINUTES.

    5. PANKO IS A JAPANESE BREAD CRUMB WHICH IS EXCELLENT TO USE IF YOU WANT A REAL NICE CRUNCHY CRUST. IT SHOULD BE USED IN THIS RECIPE, BUT IT IT'S NOT AVAILABLE YOU CAN USE REGULAR BREAD CRUMBS.
