    List of Ingredients


    • 2/3 CUPS COTTAGE CHEESE
    • 1/4 CUP MILK OR 1/2 & 1/2
    • 1 TABLESLPOON GRATED PARAMESAN CHEESE
    • 1/2 GARLIC CLOVE, MINCED
    • 1/4 TEASPOON SALT
    • 1/8 TEASPOON FRESHLY GROUND BLACK PEPPER
    • 20 OUNCES STEAMED UNTIL TENDER SPINACH LEAVES, CHOPPED


    Instructions


    1. IN A FOOD PROCESSOR OR BLENDER, COMBINE COTTAGE CHEESE, MILK PARMESAN CHEESE, GARLIC SALT AND PEPPER, PUREE UNTIL SMOOTH.
    2. ADD ONE FOURTH OF THE SPINACH TO THE COTTAGE CHEESE MIXTURE, PUREE UNTIL SMOOTH.
    3. IN A LARGE SKILLET, COMBINE THE REMAINING SPINACH AND COTTAGE CHEESE MIXTURE. COOK OVER MEDIUM HEAT, STIRRING OCCASIONALLY 5 MINUTES OR UNTIL HEATED THROUGH.
