CREAMED SPINACH
List of Ingredients
- 2/3 CUPS COTTAGE CHEESE
- 1/4 CUP MILK OR 1/2 & 1/2
- 1 TABLESLPOON GRATED PARAMESAN CHEESE
- 1/2 GARLIC CLOVE, MINCED
- 1/4 TEASPOON SALT
- 1/8 TEASPOON FRESHLY GROUND BLACK PEPPER
- 20 OUNCES STEAMED UNTIL TENDER SPINACH LEAVES, CHOPPED
Instructions
- IN A FOOD PROCESSOR OR BLENDER, COMBINE COTTAGE CHEESE, MILK PARMESAN CHEESE, GARLIC SALT AND PEPPER, PUREE UNTIL SMOOTH.
- ADD ONE FOURTH OF THE SPINACH TO THE COTTAGE CHEESE MIXTURE, PUREE UNTIL SMOOTH.
- IN A LARGE SKILLET, COMBINE THE REMAINING SPINACH AND COTTAGE CHEESE MIXTURE. COOK OVER MEDIUM HEAT, STIRRING OCCASIONALLY 5 MINUTES OR UNTIL HEATED THROUGH.
