APPLESAUCE CAKE
Recipe Introduction
THIS IS A RICH TASTING MOIST CAKE WHICH ELIMINATES THE NEED TO ADD MILK AND EGGS, MAKING IT LOW IN FAT. IT IS TASTY AND VERY DELICIOUS. MY FAMILYS FAVORITE.
List of Ingredients
- 2 CUPS FLOUR
- 1 TEASPOON BAKING SODA
- 1 TEASPOON CINNAMON
- 1/2 TEASPOON SALT
- 1/2 TEASPOON ALL SPICE, GROUND ( OPTIONAL)
- 1/2 CUP ( 1 STICK ) BUTTER OR MARGARINE****
- 1 CUP FIRMLY PACKED BROWN SUGAR
- 1 CUP UNSWEETENED APPLESAUCE****
- 1 CUP GOLDEN RAISINS
- 1/2 CUP CHOPPED PECANS OR WALNUTS
Instructions
- PREHEAT OVEN TO 350°. GREASE AND FLOUR A 13X9" BAKING PAN, SET ASIDE
- SIFT FLOUR, BAKING SODA, CINNAMON, SALT AND ALLSPICE IN A BOWL. SET ASIDE
- IN A MIXING BOWL BEAT BUTTER WITH SUGAR UNTIL LIGHT AND FLUFFY. BEAT IN APPLESAUCE. ADD SIFTED DRY INGREDIENTS ALL AT ONCE, MIX JUST TO MOISTEN ALL THE INGREDIENTS. STIR IN THE RAISINS AND PECANS. SPREAD BATTER IN PREPARED PAN AND BAKE 35 TO 45 MINUTES OR UNTIL CAKE TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL CAKE IN PAN ON WIRE RACK BEFORE CUTTING INTO SQUARES.
- YOU CAN SERVE THIS CAKE AT ROOM TEMPERATURE OR WARM. TOP WITH WHIPPED CREAM, VANILLA ICE CREAM, CINNAMON FLAVORED CHUNKY APPLESAUCE WARMED, OR JUST SPRINKLE WITH POWDERED SUGAR.
- ****IF YOU ARE OUT OF APPLESAUCE, YOU CAN PEEL, CORE AND CUT UP 2 APPLES AND COOK UNTIL IT TURNS MUSHY WITH 2 TO 4 TABLESPOONS OF APPLE JUICE OR WATER IN A SAUCEPAN. THIS SHOULD MAKE 1 CUP
- *****DO NOT USE THE REDUCED FAT MARGARINE BECAUSE OF THE HIGH WATER CONTENTS. LAND O LAKES SWEET CREAM SPREAD WORKS WONDERFULLY IN ANY BAKED ITEMS. I USE IT ALL THE TIME WHEN I BAKE.
