AMBROSIA BARS
List of Ingredients
- 1 1/2 CUPS FLOUR
- 1/3 CUP CONFECTIONERS' SUGAR
- 3/4 CUPS COLD BUTTER
- 2 CUPS FIRMLY PACKED BROWN SUGAR
- 4 BEATEN EGGS
- 1 CUP FLAKED COCONUT
- 1 CUP FINELY CHOPPED PECANS
- 3 TABLESPOONS FLOUR
- 1/2 TEASPOON BAKING POWDER
- ICING:D
- 2 CUPS POWDERED SUGAR
- 3 TABLESPOONS LEMON JUICE
- 2 TABLESPOONS SOFT BUTTER
Instructions
- PREHEAT OVEN TO 350°. LIGHTLY GREASE A 9 X 13" BAKING PAN.
- IN A MEDIUM BOWL, COMBINE FLOUR AND POWDERED SUGAR, CUT IN 3/4 CUPS BUTTER UNTIL MIXTURE IS CRUMBLY.
- PRESS ONTO PREPARED BAKING PAN AND BAKE 15 MINUTES.
- IN A LARGE BOWL, COMBINE BROWN SUGAR, EGGS, COCONUT, PECANS, 3 TABLESPOONS FLOUR AND BAKING POWDER, MIX WELL. SPREAD EVENLY OVER BAKED CRUST AND BAKE 20 TO 25 MINUTES. COOL.
- IN A BOWL, MIX TOGETHER THE ICING INGREDIENTS UNTIL SMOOTH. SPREAD OVER TOP AND CHILL.
- CUT INTO BARS. STORE COVERED IN REFRIGERATOR.
- 36 BARS.
