BAKED POTATO SOUP
List of Ingredients
- 4 LARGE POTATOES
- 2/3 CUP BUTTER
- 2/3 CUPS FLOUR
- 1 1/2 QUARTS MILK
- SALT AND PEPPER TO TASTE
- 4 GREEN ONIONS
- 1 CUP SOUR CREAM
- 2 CUPS COOKED CRISP BACON, CRUMBLELD
- 5 OUNCES GRATED CHEDDAR CHEESE
Instructions
- PREHEAT OVEN TO 350°. BAKE POTATOES UNTIL FORK TENDER.
- MELT BUTTER IN MEDIUM SAUCEPAN. BLEND IN FLOUR WITH A WIRE WHISK UNTIL WELL BLENDED. ADD MILK TO MIXTURE, STIRRING CONSTANTLY. ADD SALT AND PEPPER TO TASTE, AND SIMMER OVER LOW HEAT, STIRRING CONSTANTLY.
- WHEN POTATOES ARE DONE, CUT IN HALF AND SCOOP OUT THE MIDDLE. SET SKINS ASIDE.
- WHEN MILK MIXTURE IS VERY HOT, MIX IN POTATOES, CHOPPED GREEN ONIONS, STIRRING WELL, ADD SOUR CREAM AND BACON. HEAT THOROUGHLY AND ADD CHEESE A LITTLE AT A TIME. STIR UNTIL MELTED.
