    BAKED POTATO SOUP


    List of Ingredients


    • 4 LARGE POTATOES
    • 2/3 CUP BUTTER
    • 2/3 CUPS FLOUR
    • 1 1/2 QUARTS MILK
    • SALT AND PEPPER TO TASTE
    • 4 GREEN ONIONS
    • 1 CUP SOUR CREAM
    • 2 CUPS COOKED CRISP BACON, CRUMBLELD
    • 5 OUNCES GRATED CHEDDAR CHEESE


    Instructions


    1. PREHEAT OVEN TO 350°. BAKE POTATOES UNTIL FORK TENDER.
    2. MELT BUTTER IN MEDIUM SAUCEPAN. BLEND IN FLOUR WITH A WIRE WHISK UNTIL WELL BLENDED. ADD MILK TO MIXTURE, STIRRING CONSTANTLY. ADD SALT AND PEPPER TO TASTE, AND SIMMER OVER LOW HEAT, STIRRING CONSTANTLY.
    3. WHEN POTATOES ARE DONE, CUT IN HALF AND SCOOP OUT THE MIDDLE. SET SKINS ASIDE.
    4. WHEN MILK MIXTURE IS VERY HOT, MIX IN POTATOES, CHOPPED GREEN ONIONS, STIRRING WELL, ADD SOUR CREAM AND BACON. HEAT THOROUGHLY AND ADD CHEESE A LITTLE AT A TIME. STIR UNTIL MELTED.
    5. SUBMITTED BY NERIS FROM ANOTHER SITE.
    6. YOU CAN CHOP UP SOME OF THE POTATO SKINS AND ADD TO THE SOUP IF YOU WANT.
