    • 6 CUPS CHOPPED BROCCOLI
    • 2 CUPS CHICKEN BROTH
    • 1 MEDIUM CHOPPED ONION
    • 2 TABLESPOONS FRESH LEMON JUICE
    • 1 LARGE GARLIC CLOVE, MINCEDDD
    • FRESHLY GROUND BLACK PEPPER TO TASTE
    • 1 CUP 1/2 & 1/2 OR MILK
    • SMALL BROCCOLI FLORETS FOR GARNISHING, STEAMED AL DENTE


    Instructions


    1. IN A SMALL TO MEDIUM STOCK POT, COMBINE CHOPPED BROCCOLI, CHICKEN BROTH, ONION, LEMON JUICE, GARLIC, PEPPER AND 1 CUP WATER, BRING TO A BOIL.
    2. REDUCE HEAT TO MEDIUM, COOK COVERED FOR 12 TO 15 MINUTES OR UNTIL BROCCOLI IS TENDER, ADDING MORE WATER A TABLESPOON AT A TIME IF LIQUID IS EVAPORATING.
    3. TRANSFER BROCCOLI MIXTURE TO A FOOD PROCESSOR AND PUREE UNTIL SMOOTH.
    4. RETURN MIXTURE TO STOCK POT, STIR IN 1/2&1/2 OR MILK. COOK OVER LOW HEAT, STIRRING FREQUENTLY UNTIL HOT. DO NOT BOIL.
    5. SPOON SOUP EVENLY INTO 4 SOUP BOWLS AND GARNISH WITH BROCCOLI FLORETS.
    6. 4 SERVINGS
