CREAMY WILD RICE SOUP
THIS IS A WONDERFUL SOUP. IF YOU WANT TO MAKE THIS SOUP A BIT RICHER, REDUCE THE AMOUNT OF MILK AND REPLACE IT WITH HEAVY CREAM.
List of Ingredients
- 1/3 CUP WILD RICE
- 1 CUP WATER
- 1/2 TEASPOON SALT
- 1/2 CUP BUTTER
- 3/4 CUP CHOPPED ONIONS
- 1 CUP FINELY CHOPPED CELERY
- 2 TEASPOONS SALT
- 1/4 TEASPOON WHITE PEPPER, DO NOT SUBSTITUTE
- 1/4 CUP FLOUR
- 5 CUPS MILK OR 2 CUPS MILK AND 3 CUPS HEAVY CREAM
- CHOPPED CHIVES
Instructions
- THOROUGHLY RINSE WILD RICE.
- IN A SAUCEPAN BRING TO A BOIL THE WILD RICE, 1/2 TEASPOON SALT AND WATER. REDUCE HEAT AND SIMMER 30 TO 45 MINUTES OR UNTIL TENDER.
- MELT BUTTER ADD ONIONS AND CELREY TO A POT, COVER AND SAUTE GENTLY FOR 5 MINUTES OR UNTIL VEGETABLES ARE TENDER ( DO NOT BROWN VEGETABLES). STIR IN 2 TEASPOONS SALT, PEPPER AND FLOUR. REMOVE FROM HEAT AND ADD MILK, STIRRING UNTIL FLOUR IS WELL BLENDED USING A WIRE WHISK.
- RETURN TO LOW HEAT. COOK, STIRRING CONSTANTLY UNTIL SOUP THICKENS. ADD THE COOKED WILD RICE AND SIMMER A FEW MINUTES TO BLEND FLAVORS. SERVE IN BOWLS WITH SPRINKLED CHIVES ON TOP.
