    CREAMY WILD RICE SOUP

    THIS IS A WONDERFUL SOUP. IF YOU WANT TO MAKE THIS SOUP A BIT RICHER, REDUCE THE AMOUNT OF MILK AND REPLACE IT WITH HEAVY CREAM.


    List of Ingredients


    • 1/3 CUP WILD RICE
    • 1 CUP WATER
    • 1/2 TEASPOON SALT
    • 1/2 CUP BUTTER
    • 3/4 CUP CHOPPED ONIONS
    • 1 CUP FINELY CHOPPED CELERY
    • 2 TEASPOONS SALT
    • 1/4 TEASPOON WHITE PEPPER, DO NOT SUBSTITUTE
    • 1/4 CUP FLOUR
    • 5 CUPS MILK OR 2 CUPS MILK AND 3 CUPS HEAVY CREAM
    • CHOPPED CHIVES


    Instructions


    1. THOROUGHLY RINSE WILD RICE.
    2. IN A SAUCEPAN BRING TO A BOIL THE WILD RICE, 1/2 TEASPOON SALT AND WATER. REDUCE HEAT AND SIMMER 30 TO 45 MINUTES OR UNTIL TENDER.
    3. MELT BUTTER ADD ONIONS AND CELREY TO A POT, COVER AND SAUTE GENTLY FOR 5 MINUTES OR UNTIL VEGETABLES ARE TENDER ( DO NOT BROWN VEGETABLES). STIR IN 2 TEASPOONS SALT, PEPPER AND FLOUR. REMOVE FROM HEAT AND ADD MILK, STIRRING UNTIL FLOUR IS WELL BLENDED USING A WIRE WHISK.
    4. RETURN TO LOW HEAT. COOK, STIRRING CONSTANTLY UNTIL SOUP THICKENS. ADD THE COOKED WILD RICE AND SIMMER A FEW MINUTES TO BLEND FLAVORS. SERVE IN BOWLS WITH SPRINKLED CHIVES ON TOP.
    5. 6 SERVINGS.

    DELICIOUS ESPECIALLY IF YOU USE THE HEAVY CREAM.
