APPLE TRIFLE

- 1/2 CUP MILK
- 1 1/2 TEASPOONS CORNSTRCH
- 4 1/2 TEASPOONS DARK BROWN SUGAR
- 1 EGG WHITE
- 1/2 TEASPOON CANOLA OIL
- 1/2 TEASPOON VANILLA EXTRACT
- 1/2 TEASPOON RUM EXTRACT, DIVIDED
- 1/4 CUP UNSWEETENED APPLE CIDER, DIVIDED
- 2 TABLESPOONS RAISINS
- 1/2 TEASPOON GROUND CINNAMON
- 1 CUP PEELED AND CHOPPED GOLDEN DELICIOUS APPLE
- 1 CUP ( 1/2") ANGEL FOOD CAKE CUBES, DIVIDED
Instructions
- IN A SMALL HEAVY SAUCEPAN, COMBINE MILK AND CORNSTARCH, STIR UNTIL CORNSTARCH IS COMPLETELY DISSOLVED. ADD BROWN SUGAR, EGG WHITE AND OIL, BLENDING WELL. SLOWLY BRING TO A BOIL OVER MEDIUM LOW HEAT UNTIL THICKENED, STIRRING CONSTANTLY WITH WIRE WHISK. REMOVE FROM HEAT, STIR IN VANILLA AND 1/4 TEASPOONRUM EXTRACT. SET ASIDE AND ALLOW TO COOL COMPLETELY.
- COMBINE 2 TABLESPOONS CIDER, RAISINS AND CINNAMON IN A MEDIUM SAUCEPAN, BRING TO A BOIL OVER MEDIUM LOW HEAT. ADD APPLE AND COOK UNTIL APPLE IS FORK TENDER AND ALL THE LIQUID HAS BEEN ABSORBED, STIRRING FREQUENTLY. REMOVE FROM HEAT AND SET ASIDE TO COOL.
- ASSEMBLING TRIFLE:
- PLACE 1/4 CUP ANGEL FOOD CAKE CUBES IN BOTTOM OF 2 SMALL TRIFLE OR DESSERT DISHES. COMBINE REMAINING 2 TABLESPOONS CIDER AND 1/4 TEASPOON RUM EXTRACT IN A SMALL BOWL, MIX WELL. SPOON 1 1/2 TEASPOONS CIDER MIXTURE OVER CAKE IN EACH DISH. TOP EACH WITH 1/4 OF CUSTARD MIXTURE AND 1/4 CUP COOKED APPLE MIXTURE. REPEAT LAYERS. SERVE IMMEDIATELY.
