    ALL IN ONE BREAKFAST SKILLET

    I got this recipe out of a magazine about a year ago & it has been a favorite in my house ever since. My husband even likes to cook this dish so I like that part too! But, the best part is you make everything in 1 pan so there isn't so much mess to clean up!


    List of Ingredients


    • 1 pkg hash brown potatoes--the chunks not shredded
    • 1 small onion-chopped
    • 1 small bellpepper-chopped
    • 6 slices bacon
    • 1 cup cheddar cheese-shredded
    • 4-5-6 eggs--depending on family size


    Instructions


    1. In a large, deep skillet, fry bacon until crisp. Remove & Crumble.
    2. Leave enough grease in the skillet to keep potatoes from sticking.
    3. Add hash brown potatoes, onion, & bell pepper.
    4. Cook until golden stirring occasionally.
    5. When hashbrowns are done, make 4-5-or 6 small holes/wells in the potatoes.
    6. Crack an egg in each well.
    7. Sprinkle with crumbled bacon and cover with a lid.
    8. Allow to cook, covered for about 2-3 minutes or until eggs are set.
    9. Sprinkle with cheese and let melt.
    10. Serve.


    Final Comments


    This is made with "breakfast food", but it also makes a great dinner too!
