COLORFUL SCRAMBLED EGGS
These eggs turn out delicious. It is also a good way to get your kids to eat more veggies. It's great as a meal anytime.
List of Ingredients
- 1/2 cup chopped green onions
- 1/2 cup chopped zucchini
- 1/2 cup chopped green or red bellpepper
- 1 tblsp oil
- 1 cup fresh or frozen corn
- salt & pepper to taste
- 8 eggs beaten
- 1 cup shredded cheese
Instructions
- In a large skillet, saute onins, zucchini and peppers in oil until tender.(About 5 min)
- Add corn, salt & pepper. Mix well
- Add eggs; sprinkle with cheese.
- Cook and stir gently until eggs are completely set.
