    Ginger Beer

    Ingredients:
    3/4 cup grated fresh ginger
    2 tablespoons lime juice
    1/2 teaspoon cream of tartar
    12 1/2 cups water
    2 packages yeast
    2 cups sugar




    Directions:
    Combine ginger, lime juice and cream of tartar and stir well. Boil 12 cups of water and pour over ginger mixture. Set aside to cool.

    Combine yeast with 1/2 cup water and 1/2 cup sugar. Stir to a smooth paste. Add cooled ginger mixture and stir well. Cover loosely with plastic wrap and let sit for 3 days. Pour ginger mixture through sieve. Add remaining sugar and serve chilled. Makes 12 servings.
