Quick Chile Casserole
8 eggs
1 (4 ounce) can whole green chile peppers,
undrained
1 pound sharp cheddar cheese or Monterey
jack cheese, grated
Heat oven to 325 degrees F.
Mix eggs and chile peppers in blender at high speed.
In large mixing bowl, combine egg mixture with cheese, stirring until well mixed. Pour into a greased, shallow 1 1/2-quart baking dish. Bake for 50 to 60 minutes, until puffed and golden brown, or until a knife inserted in center comes out clean.
