    Can be eaten hot or served cold as tapas. Choose at least three of the veg.


    List of Ingredients


    • Olive oil
    • salt and pepper
    • Sliced fennel
    • Red capsicum cut into fillets
    • Diagonally sliced zucchini or eggplant
    • Peeled and thinly sliced sweet potato
    • Peeled and quartered small beetroot
    • Cherry tomatoes
    • Wedges of onion


    Instructions


    1. Toss each separate vegetable in oilive oil with salt and pepper. With some you may wish to vary seasoning (eg chicken salt and rosemary for sweet potato, cinnamon for beetroot, Tuscan seasoning for zucchini, but all of that is optional and salt and pepper are fine)
    2. Arrange in a large tray. You can mix it all together to make a medley, but I prefer the veg separated out.
    3. Preheat oven (which also warms your house). Pop the veg in the oven for 10-30 min (as long as it takes to have a delicious scent and colour).
    4. Eat warm with bread or a salad or serve as tapas.


    Final Comments


    Fantastic with a glass of good shiraz. Can throw leftovers into your pasta, salad or risotto or on your pizza if you want.
