I adapted this from the shop version
Recipe Introduction
The shop version had mayonnaise (which I don't eat) and vegan cheese (ditto). The beetroot relish and garlic on the mushrooms is flavour enough in my book
List of Ingredients
- slices of zucchini, blanched, roasted or barbecues
- slices of pumpkin, blanched, roasted or barbecued
- baby spinach leaves
- garlic mushrooms (slices of mushroom cooked in salt, pepper, garlic, herbs and maybe lemon or verjuice)
- grilled or blanched/peeled capsicum
- beetroot relish (make your own or use a good quality vegan dip)
- gf bread
Instructions
- Prepare all the vegetables. Baby spinach can be raw or wilted.
- Spread one side of bread with beetroot. Use plain nuttelex (or nothing) on the other side
- Pile vegies on in layers and enjoy
