    Recipe Introduction


    You don't have to get the lentils out of a packet. You can boil up 300g lentils yourself flavoured with whatever spices you like. Be heavy on the spice because the sweet potato and rice are so bland. The chia seeds stick the mix together (ie a vegan egg)


    List of Ingredients


    • 1 sweet potato
    • water
    • salt
    • 1 packet moroccan lentils (or make plain lentils and add moroccan spices to patty mix OR make any flavoured lentil recipe you like - about 300g dried lentils)
    • 2 tbs chia seeds
    • 2-3 spring onions
    • 1/2- 1 cup cooked brown rice (optional)
    • coriander leaves (optional)
    • salad and/or bread to serve


    Instructions


    1. Peel, chop and boil in salted water 1 sweet potato. When tender drain and mash
    2. Cook lentils according to packet directions (or according to your favourite dahl recipe, or plain in salted water and then add spices to patty mix. Soak chia seeds in 5 tbs water
    3. Mix lentils through mashed sweet potato. Add soaked chia water and seeds, finely chopped spring onion and coriander leaves and rice if using (but if you use rice you will need more spice)
    4. You may add 1-2 finely chopped garlic cloves here
    5. Drop hot spoonfuls of the mix on a hot oiled pan or grill. Flip carefully as they can break. Blackened bits are ok the taste should still be great.


    Final Comments


    Serve on a burger bun or with a salad. Even meat-eaters should like this one
