No life is NOT too short!
List of Ingredients
12 mushrooms
about 1/2 cup gluten free breadcrumbs
1/4 cup grated vegan cheese (I use no cheese)
2-3 tbs olive oil or non-dairy spread
3 cloves garlic
fresh or dried herbs of your choice
very finely diced bits of red onion (optional but have to be very fine)
a dash of wine (red or white is ok, but dry)
Something to stick it together such as arrowroot or soaked chia seeds
tomato passata (just a small dash) to taste
Recipe
Remove stems from mushrooms and chop finely. Finely chop garlic and herbs too.
Combine all of those with all other ingredients and stuff into mushroom (squish with hands, makes a round almost sphere)
Cook on barbecue on low heat with lid down (or in oven) until cooked through.
Good with green salad, bean salad, bread, potato salad or as an appetiser. Worth doubling recipe as they disappear fast!
