List of Ingredients



• 450g can pineapple pieces in juice
  
• 400ml can coconut cream, chilled
  
• 1/3 cup (80ml) lime juice
  
• 2 tbs caster sugar
  
• 250g frozen sliced strawberries
  
• 1 cup crushed ice
  
• pineapple wedges to serve
  
• mint sprigs to serve
  






Instructions



1. Line a large bakin tray with baking paper. Drain pineapple pieces reserving the juice. Arrange pineapple pieces over the lined tray. Freeze for 1 hr until firm
   
2. Blend together frozen pineapple, reserved pineapple juice, coconut crea,m half the lime juice and half the sugar until smooth. Transfer to jug
   
3. In a clean blender blend strawberries, ice and remaining lime juice and sugar in a clean blender and blend until smooth.
   
4. Pour strawberry mixture among serving glasses. Top with pineapple mixture. Decorate with pineapple wedges and mint sprigs and serve immediately.
