List of Ingredients
- 450g can pineapple pieces in juice
- 400ml can coconut cream, chilled
- 1/3 cup (80ml) lime juice
- 2 tbs caster sugar
- 250g frozen sliced strawberries
- 1 cup crushed ice
- pineapple wedges to serve
- mint sprigs to serve
Instructions
- Line a large bakin tray with baking paper. Drain pineapple pieces reserving the juice. Arrange pineapple pieces over the lined tray. Freeze for 1 hr until firm
- Blend together frozen pineapple, reserved pineapple juice, coconut crea,m half the lime juice and half the sugar until smooth. Transfer to jug
- In a clean blender blend strawberries, ice and remaining lime juice and sugar in a clean blender and blend until smooth.
- Pour strawberry mixture among serving glasses. Top with pineapple mixture. Decorate with pineapple wedges and mint sprigs and serve immediately.
