Buckwheat Pancakes

serves 1-2. Yes ok these are pancakes without wheat, milk or egg wtf am I doing. But wait until you taste them.
List of Ingredients
- approx 1/3 of a 375g buckwheat pancake mix (I used Orgran gluten free)
- 2 tbs black chia seeds soaked in 4tbs water (or use non-dairy milk)
- 1 cup almond milk (I used Australia's Own Organic blended with coconut)
- 1/4 cup walnuts (I ground them up in my mortar and pestle, sometimes I just break them or chop them for larger crunch)
- (if you don't like walnuts leave them out or use LSA instead)
- 1 tbs macadamia oil (optional)
- 6 strawberries
- a tiny drizzle maple syrup (when I am being a cheapskate I use raw 1/2 tsp raw sugar instead)
- pinch salt (optional)
- generous sprinkle (maybe about 1/2 tbs) cinnamon
Instructions
- Mix together the pancake mix, chia seeds and their liquid, almond milk, walnuts, cinnamon and macadamia oil
- Melt some nuttelex or use an oil you like (eg olive or canola) to fry the pancakes.
- Stack 2 pancakes with sliced strawberries. Drizzle with maple syrup or sprinkle with sugar. Enjoy with your cup of coffee for a weekend breakfast
