Fried potatoes

Recipe Introduction
This is one of many things you can have for breakfast (when lots of carbs and a bit of grease is not a big problem because you will be active for hours). Also works as a side dish for dinner.
List of Ingredients
- Potatoes. As many as you want depending on greed
- oil (canola or something) lots of it. Can reuse
- chicken salt or whatever seasoning mix you are clever enough to make
Instructions
- Cook potatoes 3-4 minutes in microwave until softened but not falling apart (waxy ones are best). Let cool.
- Slice potatoes thinly
- Heat pan well and add oil. Wait until oil is very hot and gently drop in potato slices making sure they do not overlap. Cook about 1 minute (more if you want them dark) and turn over. Cook 1 more minute.
- Drain well and season. By now they will be telling you to eat them so I don't have to tell you.
